Basmati vs. jasmine rice: what is the difference?
Both are aromatic long-grain rices and share 2-acetyl-1-pyrroline as an important aroma compound. Basmati generally cooks into long, separate grains; jasmine is softer and a little more cohesive. Their basic macronutrient profiles are similar, although some basmati varieties have tested lower on the glycemic index.
