Why do potatoes stay hard in stews?
The most common reason potatoes stay firm for an unusually long time in a stew is an acidic cooking liquid. Tomatoes, wine, vinegar or lemon can slow the breakdown of cell-wall pectin. Potato type, piece size and a very low simmer matter too. In strongly acidic dishes, cook the potatoes until nearly tender before adding most of the acidic ingredients.
