Old dry yeast is usually a performance problem rather than a spoilage problem: fewer cells remain active, so dough may rise slowly or not at all. A quick warm-water test can tell you whether it is still producing gas.
Cream of tartar is not creamy at all. It is potassium bitartrate, a dry acid that can stabilize whipped egg whites, supply the acid baking soda needs, and discourage large sugar crystals.
Cornstarch is roughly twice as powerful as all-purpose flour by volume for many sauces. It gives a glossy finish, while flour makes a more opaque, creamy sauce and works naturally in a roux.
Self-rising flour is a prepared flour with leavener already built in, while all-purpose flour lets the recipe control leavening and salt separately. They can sometimes substitute for each other, but not as a blind cup-for-cup exchange.
Cake flour is designed for tenderness. Its lower protein and fine texture reduce gluten-forming potential compared with all-purpose flour, helping delicate cakes bake with a finer, softer crumb. All-purpose flour can still make good cake, but the recipe and mixing method matter more.
Bread flour is usually higher in protein than all-purpose flour, so it builds a stronger gluten network and often absorbs a little more water. All-purpose flour can still make excellent bread; the trade-off is usually a softer, less chewy structure rather than a failed loaf.
Instant yeast usually starts a little faster because its smaller particles rehydrate quickly and can be mixed right into flour. Active dry yeast may take longer to get going, but major baking references allow a 1:1 substitution in most standard doughs.
Both leaveners can create carbon dioxide, but they are designed for different chemical environments. Baking soda needs enough acid in the formula; baking powder carries its own acid system. Swapping them without reformulating can change rise, flavor, color, and texture.
Canned coconut milk and coconut cream are both made from coconut flesh and water, but coconut cream is more concentrated. It has more coconut solids and usually more fat, giving it a thicker texture and richer flavor. Sweetened cream of coconut is a different product.
Burrata and fresh mozzarella share a stretched-curd heritage, but burrata is built around a creamy filling. Mozzarella is uniform all the way through; burrata has an outer shell surrounding stracciatella and cream, so it is softer, richer, and best eaten very fresh.
Cream cheese is dense and spreadable because it is a fresh cheese; sour cream is cultured cream and contains more water. They share dairy tang and richness, but replacing one with the other changes thickness, moisture, and sometimes how a recipe sets.
Used frying oil can be reused, but not indefinitely. Its useful life depends on temperature, food debris, moisture, the oil itself, and storage. Straining and cool, sealed storage help; foaming, rancid odor, heavy darkening, or abnormal smoking are reasons to discard it.
