You do not need to turn the sink into a chemistry experiment to wash an apple or lettuce. For routine household produce washing, potable running water and friction are the basic recommendation. Vinegar and baking soda can affect certain residues or microbes under specific test conditions, but that does not make either one a required step or a guaranteed disinfectant.
“It worked in a study” does not mean “everyone needs to do it”
A washing solution works differently depending on concentration, contact time, temperature, produce surface, and the microbe or chemical residue being targeted. An unmeasured homemade splash does not automatically reproduce experimental conditions.
FDA guidance recommends washing produce thoroughly under running water and does not require vinegar, baking soda, or a commercial produce wash for routine household preparation.
Produce shape matters too. Rubbing a smooth apple is different from cleaning folded lettuce leaves, delicate berries, or broccoli florets. A result measured on one surface should not be treated as a fixed percentage that applies to every fruit and vegetable.
Vinegar can reduce some bacteria, but it does not sterilize produce
Household-washing studies have measured microbial reductions with acidic solutions, but results vary greatly among lettuce, tomatoes, apples, cucumbers, and other surfaces. In one study, soaking lettuce in 5% vinegar before rinsing did not reduce an indicator bacterium significantly more than soaking in cold tap water.
Other experiments using different concentrations and contact times have found additional reductions. That variability is the point: “a splash of vinegar” is not a standardized sanitizing dose.
A microbial reduction is not the same as sterility. Produce that has been washed with vinegar still needs normal refrigeration, clean hands, and protection from cross-contamination with raw meat, dirty utensils, or spoiled food.
Baking soda has a different evidence base: some surface pesticides
An apple study using two experimentally applied pesticides found a baking-soda solution of 10 mg/mL, about 1%, removed surface residues more effectively than tap water under those test conditions. It took about 12–15 minutes to completely remove the tested surface residues.
The same experiment also showed the limitation: some pesticide had penetrated the apple peel and could not be washed away. The result does not show that baking soda removes every pesticide from every fruit or vegetable.
Baking soda is therefore not a universal pesticide eraser. The chemical involved, how long it has been on the produce, and how deeply it has moved into the surface all affect what washing can remove.
Pesticide removal and microbial safety are different questions
A solution can help with a chemical residue without being a reliable way to control pathogens. None of these washes substitutes for refrigeration, avoiding cross-contamination, discarding rotten produce, or cooking when appropriate.
For household handling, sequence matters: wash your hands, remove damaged areas, rinse produce before cutting, and keep knives and cutting boards clean. Cutting first can carry contamination from the outer surface into the edible interior with the knife.
Commercial pesticide tolerances are also set within a regulatory safety framework. Routine washing can remove dirt and some surface residues, but the goal is not to create a chemically “zero” surface at home.
Do not use dish soap or detergent
Soap is designed for hands or dishes, not to remain on porous food. The FDA specifically advises against using soap, detergent, or unvalidated commercial produce washes on fruits and vegetables.
More foam or a stronger “clean” smell is not evidence that produce is safer. Household cleaning products can leave residues and are not formulated as food ingredients. Produce should be washed as food, not treated like a countertop.
So should you use vinegar or baking soda?
For ordinary produce at home: neither is required. Rinse under running water, rub the surface, brush firm produce, and dry with a clean towel or paper towel.
For leafy vegetables or produce with folds and crevices, separating pieces when practical helps water reach more surface. With fragile berries, gentler rinsing avoids damaging them before you eat them. Drying after washing can improve texture and remove some surface water.
If public-health authorities issue a specific sanitizing instruction for an outbreak or particular product, follow that protocol rather than improvising concentrations. Routine washing does not need an acid-base experiment.
The everyday routine is simple: potable water, reasonable friction, clean utensils, and proper storage. Vinegar or baking soda may have specific uses, but neither needs to become a universal ritual for every piece of produce.
